Shelley Says....

So last Christmas when I was doing my blog everyday, I promised ya'll I would post this delicious brownie recipe that my mom made for us over the holidays. A few of you have twittered me since, asking me to make good on my promise! Well here it is. They just make a 9 x 9 pan, enough for about two people. HAHA....

This is the pic I took of them last Christmas...you can kinda tell how we just walk past it with a fork and take pieces out. We are so redneck.

Red Velvet Brownies

1- 4oz bittersweet chocolate baking bar,chopped
3/4 cup butter
2 cups sugar
4 large eggs
1 and 1/2 cups all purpose flour
1- 1oz bottle red liquid food coloring
1 and 1/12 tsp. baking powder
1 tsp. vanilla
1/8 tsp. salt
small batch of cream cheese frosting

1. Preheat oven to 350°. Line bottom and sides of a 9-inch square pan with aluminum foil, allowing 2 to 3 inches to extend over sides; lightly grease foil.

2. Microwave chocolate and butter in a large microwave-safe bowl at HIGH 1 1/2 to 2 minutes or until melted and smooth, stirring at 30-second intervals. Whisk in sugar. Add eggs, 1 at a time, whisking just until blended after each addition. Gently stir in flour and next 4 ingredients. Pour mixture into prepared pan.

3. Bake at 350° for 44 to 48 minutes or until a wooden pick inserted in center comes out with a few moist crumbs. Cool completely on a wire rack (about 2 hours).

4. Lift brownies from pan, using foil sides as handles; gently remove foil. Spread Small-Batch Cream Cheese Frosting on top of brownies, and cut into 16 squares. Garnish, if desired.

Note: Line pan with foil by trimming two long foil pieces to a 9-inch width. Fit strips, crossing each other, in the pan.

Cream Cheese Icing (small batch)
1 (8-oz.) package cream cheese, softened
3 tablespoons butter, softened
1 1/2 cups powdered sugar
1/8 teaspoon salt
1 teaspoon vanilla extract

Beat cream cheese and butter at medium speed with an electric mixer until creamy. Gradually add powdered sugar and salt, beating until blended. Stir in vanilla.

These are super good. I think my mom got the recipe from a Southern Living. So if you make this, send them a royalty or something....

Grand Ole Opry Performance

We are so excited to be playing the Opry this Saturday, July 23. It is such a fun experience each time we are asked to come out and perform. Some of the great people we will be performing with this time are Mike Snider, Jimmy C. Newman, Monte Warden. Before the show we are doing an In-Store Appearance at the Opry Shop and will sign copies of our cookbook, "Cooking with Grace". This event is free to attend so come and see us!

FOOD NOTE: Can’t have a blog without a side note about food so in that case we may have to try out the newly opened Opry Backstage Grill it looks delish!

Happy Monday!

Hope you had a great weekend. We spent the weekend getting to and from Aberdeen, SD. It's a lovely city, but not super easy to get to. We were singing on Saturday afternoon, so we decided to be safe and go in the night before to make sure we were there and ready to sing. Well, Friday night our flight out of Nashville was delayed 2 hours. Not a good start. But we did meet the group Kutless while we sat and waited for the plane. They are the nicest guys!! I'm so mad that we didn't get our picture with them.

Our connecting flight to Aberdeen was supposed to leave at 10:30 p.m. We didn't get to Minneapolis until 10:45. I guess they didn't realize how famous we were because they forgot to wait for us. haha So, we had to make a decision about what to do. We were still 5 hours away from Aberdeen. There were no hotels available close to the airport in Minny so it was either sleep at the airport and catch a flight the next day or start driving to Aberdeen. We made the decision to drive. So we said goodbye to the Kutluss boys who were headed to Rapid City while we headed to Aberdeen. Now Michael Passons our friend and piano player discouraged us from buying drinks out of the vending machine at the airport for $2.50, so we get in our 2 Grand Marquis and start heading down the road. We thought we'd stop at a gas station and get something. Did you know that there is NOTHING open from Minneapolis to Aberdeen after midnight? I mean NOTHING!!. I can't imagine what someone does if they break down out there. Needless to say, we never did get a drink for the road. About 2:30 a.m. we made it to Granite Falls, MN to find out their motels were all sold out for the night. Finally, about 3:45 a.m. we got to a town called Benson and stayed at a nice little place called the Country Inn. I was so thankful for that bed and for a bottle of water! The next day we still had 2 1/2 hours to drive, but the few hours of sleep helped tremendously.

We had a wonderful time in Aberdeen. The audience was super sweet sitting outside in 98 degree heat with a ton of humidity. We sang songs from our new release "Turn Up The Music". It was great to be with the girls and band. Our adventures together made for lots of laughs. We were thankful to get home Sunday afternoon arriving on the same flight from Minneapolis with our friends Kutless again.

This week I think I'll try to start getting things together for school. We have a few more weeks, but I feel like it's going to fly by. I think Shelley may be posting a yummy recipe tomorrow, so make sure you check out tomorrow's blog. Hope you have a fantastic day.

Thankful For Hope - Denise

Okay, so today I'm feeling a little more melancholy than usual. It's been one of those weeks that I'm still trying to wrap my head around. Sorry if it is a little heavy. A precious family that I have come to know last year suffered a loss last Thursday July 7. Candice Page went to be with Jesus, but had to say goodbye for awhile to her husband and 3 boys. One of those boys is a friend of Price's (my youngest son). I know in my head that God is in control and that He loves us and has his perfect plan for each of us, but it's also hard to take it all in. She had to suffer so much pain in these last months and 3 boys won't have their mom at their weddings, graduations, or babies. My human mind has a hard time accepting all of that. It was also weird when I realized that my friend and amazing songwriter for POG went to be with the Lord on July 7, 2002 leaving a wife and 3 boys behind as well. But I guess that's when God reminded me of His hope. Again, the song "Blue Skies" has a special place in my heart. Every day I'm more thankful for what God has done for me. Please pray for the Page family if you think of them over the next few months.

I did have a chance to just get away for a day this week though. My friend Beth invited us to the lake for the day. It's always nice just to be away from the phone, computer, or tv. Here is a pic of my girlfriends Beth and Sandra and I. They will probably kill me for putting this in there, but it was a lake day. Of course you aren't going to be looking your best!

The rest of the week has been spent running boys to football camp, golfing, swimming, and trying to force them to get their summer reading done. Okay, who am I kidding? I'm just trying to get them to get the first book read. It's not their top priority for sure. Today I'm traveling with POG today to South Dakota:) It feels like we haven't been together in forever! Don't get me wrong, I've enjoyed some amazing family time. But they are family too and I've missed them. I'm going to have to work the cobwebs off of my voice. If you are going to be at the concert, make sure you come up and say hello. But before I leave town tonight I've got camp, dr. appts, and a few more errands to run.

I do have to tell you one crazy thing before I go. I was having trouble with my internet for the last few days. I twittered something about my comcast being down. Literally 5 minutes later Comcast calls me and says that someone informed them that my internet was down and could they set up an appointment for me. How about that???? Social networking is unbelievable sometimes. Well, i'd better go. Sorry I didn't say a whole lot today. My heart and mind are just a little tired, but thanks for reading along. Remember you are LOVED completely and He is always with you.
