Shelley Says...

I just have two little things to share with you today. One is a hilarious picture that I took of our bathtub. Caroline has been obsessed with taking a trip back to Disney. There are these Disney "behind-the-scenes" shows on Netflix, and she watched those a couple of weeks ago, and now will NOT let it go. So I go into my bathroom yesterday and she left us a little note with her tub crayons…

I love the "I will do chores" line. I know you're thinking, she should already be doing them. And you're right. But as hard as we try to implement the whole "chore" thing, it just never sticks. With school,homework, a little piano practice, and watching "Good Luck Charlie" and "The Biggest Loser", who has time?? Don't judge.

Then, I wanted to share this recipe with you in case you don't have our cookbook. A friend of mine had surgery this past week, and I am bringing her a meal tomorrow. David got a new electric smoker, so he is doing a couple of smoked chickens, and I'm going to make sweet potatoes, salad, and Glazed Tea Cake for dessert. It is truly one of my favorite desserts of all time. It makes quite a bit, so it would be a great "hand held" dessert for the super bowl. Here is the recipe. Thank me later.

Glazed Tea Cake

Tea Cake-
2 cups flour
2 cups sugar
1 tsp. salt
1 tsp. baking powder
1 cup butter 1 cup water
1/2 cup sour cream
2 large eggs
1 tsp. almond extract

1.Preheat oven to 350.
2.Grease and flour a sheet cake pan. (18 x 12 inch pan)
3.In a large bowl, combine flour, sugar, salt and baking powder. Set aside.
4.In a small saucepan, combine butter and water. Bring to a boil, stirring occasionally.
5.Add to flour mixture, stirring to combine. Stir in sour cream, eggs, and almond extract.
6.Pour into prepared pan and bake for 22-25 minutes.
7.Let cake cool and then pour on the Tea Cake Glaze.

Tea Cake Glaze-
1/2 cup butter
1/4 cup milk
1/2 tsp. almond extract
3 cups powdered sugar

1.In a medium saucepan, combine butter and milk.
2.Bring to a boil over medium heat, stirring occasionally.
3.Remove from heat.
4.Whisk in almond extract. (I always add a teeny bit more cuz love almond.)
5.Gradually whisk in powdered sugar until smooth.
6.Spread over tea cake.
7.Cut into squares and serve.

Here is what mine looks like today. It's cooling now and I will cut it in squares later. And eat one. Or two.

Good morning!

I've spent the morning listening to mixes of our new record because we are going to "Mastering" on Friday. YIPPEE~!!!! The song that I wake up singing is the title of our new CD to come called A Thousand Little Things. Can't wait for people to hear this happy little song that makes you think of of all the little blessings that God gives us every day. When you take time to think about those things, it makes it a lot easier to not focus on the hard stuff that tends to weigh us down.

One of the people I'm thankful for today is my dear friend Kelley Tansil. IT'S HER BIRTHDAY today:) HAPPY 20TH KT. haha.

She blesses me every day with a smile, a laugh, or shared tears and prayers. So thankful for dear friends like her. We worked out this morning together. UGH! I tried to tell her she didn't have to. REALLY. Oh well, glad we did it and got it over with. I'm off to meet a new friend named Cindy that is helping us with our new radio show in the works. We'll tell you more about that later:) Then it's off to pick up kids, basketball, etc. Loving life! Have a wonderful day!

Flu The Coop

The Cappillino house escaped the Flu last year...however, this year the "bug" has flown in and reaping havoc! ... "Shoo fly don't bother me - I have too much to do!!" As a matter of fact, the Cappillino that is most affected is the one that has been home from school for two days now.

The Flu couldn't have come in a more inopportune time for Darby... She missed her 3rd grade performance program. Darbs had been working so hard on her speaking and SINGING part...she would practice everyday. I hated to see how disappointed she was once the Dr. told her, "no school till Monday". She fought back the tears... Mom held back a few tears too. This may seem simple to most, but for Darby this was a real heart breaker.

Many things are out of our control and disappointment can come no matter how hard we try to keep it away... A difficult lesson for ALL ages to understand (especially a 9 yr. old) Not sure if you are dealing with some "flu like symptoms" today if so: drink plenty of liquids - John 7:37 - 38 Jesus said, "If anyone is thirsty, let him come to me and drink. Whoever believes in me, as the Scripture has said, streams of living water will flow from within him." and get plenty of rest - Psalm 16: 9 -11, "Therefore my heart is glad and my tongue rejoices; my body also will rest secure, because you will not abandon me to the grave, nor will you let your Holy One see decay. You have made known to me the path of life, you will fill me with joy in your presence, with eternal pleasures at your right hand." Doctors orders!!

Dear friends,

I wanted to write today and tell you about an amazing little Southern cookie company called Chucklet and Honey that one of my closest and dearest friends from college, Chuck Hargett, started recently…

WHY????

TWO REASONS….

1. Because you know I love food, and I never, EVER lead you astray on it, now do I??
2. Because it's almost Valentine's Day!! HELLO!! The world's greatest manufactured holiday. You gotta love it!

Here is a picture of me and Chuck. Isn't he the cutest?? He and Denise and I were the Three Musketeers in college. Oh the stories I could tell…

These cookies are SO SO VERY GOOD. I'm proud to say I actually helped him developed the maple one…well…at least I sorta "thought" he should HAVE a maple cookie. And I told him that. And he did it. Counts for somethin'.

Most of my friends love the Peanut Butter Fluffer Nutter. They are HUMONGOUS. In a good way of course. And he even has a new one especially for Valentine's Day with little cinnamon candies in it. SO SO CUTE.

My personal fave is the chocolate chip. You just can't go wrong with Chuck's recipe on this one.

On a slightly more serious note…obviously the name Chucklet is a play on words- Chuck and Chocolate. But, what's more important is the "Honey". Honey is what everyone called Chuck's mom. To say she was a precious lady is a complete understatement. The fact is, I have known no one since Honey, who every day and in every way, projects the love of Christ like she did. She was truly an angel on Earth, and now she is in Heaven. We lost her several years ago and she is missed by all who loved her every single day. This company serves as a reminder of Honey, and the sweetness she brought to everyone she came in contact with. Denise and I lived in her garage apartment the last year we were in college, and she treated us like her own daughters. I loved to make Honey laugh!!

Life is short. Make someone smile this Valentines Day. Send them a little piece of Honey and lots of "happy" from you with a box of these cookies baked with love.

Oh, and tell 'em Shelley sent you. (Maybe they'll send me some free samples.) hahahaha!!
